If you’re a girl just like me who has a sweet tooth but doesn’t want to ruin her fitness goals, oatmeal brownies are IT! They also happen to be gluten-free friendly, full of fiber and tastes just as good.
Ingredients:
- 1+1/4 cup peanut or almond butter
- 1 cup coconut sugar
- 2 eggs, at room temperature`
- 1 tsp vanilla extract
- ¾ cup rolled oats (gluten-free is welcomed)
- 1 tsp baking soda
- ¼ tsp salt
- 1 dark chocolate bar, chopped into chunks
- Sea salt (optional)
Instructions:
- Pre-heat oven to 180°C. While the oven preheats, mix together peanut butter and coconut sugar in a bowl. Whisk 2 eggs in a separate bowl, pour that into the peanut butter mixture, add vanilla extract at the very end and mix everything till it has a smooth texture.
- Add rolled oats, baking soda, salt and chocolate pieces. Combine all together.
- Spray non-stick spray or line an 8×8 inch pan with baking paper (approx. 20x20cm) and spread the dough evenly. Add more chocolate chunks on top if desired and bake for 18-20 minutes or once top and edges are golden.
- Wait at least 10 minutes for it to completely cool before slicing it. Enjoy with a cup of coffee or tea!
